To increase the productivity of their olive trees, the farmers still hand-weed and beat the branches of the plants. These olive-tree-covered hills and terraces come to life in October when the olive harvest starts, with farmers and their entire families gathering olives from sunrise to sunset and cooking all of their meals over a campfire beneath the trees, just as Palestinian families have done for generations.

Following their collection, the olives are brought to a community press where the oil is extracted and its quality is assessed.
